Aside from the mainstream ones such as Naruto, One Piece or Fullmetal Alchemist, I really enjoy Hellsing, Basilisk, Rurouni Kenshin and (for something more fun to watch) Kochikame.
If you don't mind anime movies, you must see 5 Centimeters Per Second and any of Hayao Miyazaki masterpieces. Howl's Moving Castle is a favorite of mine.

I never attempted Bleach, but when is One Piece on?! I want to try it...

I would recommend Desert Punk,Gantz,Berserk and Hokuto no ken,i like the violence that them have.;D

Yeah, anime only airs like on Saturday night here so I don't really watch it. Tried getting into Bleach, but got bored of internetting it after like the 70th episode.
FLCL is my favorite by far. Short and sweet too, only 6 episodes.

Deathnote and Bleach are two animes that I enjoyed. Deathnote was much better in my opinion, though it only had one season. Bleach is on it's thirteenth or something to that extent.
Inuyasha was decent.
Cowboy Bebop is amazing, too.
