Nothing, really. The only actual difference is that there's confetti in the epilogue when you beat Oxide.

Oxide's not even half the adventure. Next you'll have to get all time relics and race him again. I found the second battle with him much harder.

The 2nd race seemed equal, yet I've still never lost to him. The only Boss that's beat me is Pinstripe, and that was only once.

Yeah. But to add to what you said about Pinstripe, he's quite an annoyer.
EDIT: I've now beaten Oxide's ghosts in Polar Pass, Roo's Tubes, Hot Air Skyway, Crash Cove, Oxide Station, Tiger Temple, and Mystery Caves.

CTR is too easy to beat once you know how to race. The ghosts should have affected the Story mode...
