I've heard it's possible to edit the look of your 'spartan' when playing multiplayer (LIVE). Is this true? Or am I just naive? lol

You can change the looks while you are in the matchmaking lobby or in custom games lobby if thats what you mean.

^Yes. Except for Assuslt and Combat(or something like that) you get armor by playing X box Live and getting better.(Ranks)
