I use good carts that have good hidden stats as well as normal visible ones 
Here are a few of my personal favorites-
Lightweight (Peach, Daisy, Yoshi)
Birthday Girl
Sponge
Peach Parasol/Flower Glider
Reasons-This has great handling and acceleration, yet having decent speed. It not only looks great with daisy, it also is good for beginners.
Lightweight (Toad, Koopa Troopa, Lakitu, Shy Guy)
Cloud 9 (Handling) Or Birthday girl (Acceleration)
Roller
Paraglider/Swooper
Reasons-Average amazing acceleration and handling.
Or just Metal Mario/b dasher/slick/super glider for speed

I like Yoshi with Bumble V, Sponge, and Paraglider. I wish there was something that looked cooler, but this combo works perfect for me. Appearance wise I like Bruiser with Red Monster.
