Well actually once you can get your car to wheelie it veers off to the side anyways.
The physics could be off, but then again it may not be for you see some of the drag tracks (or rather atleast one of them) was used for an air strip. That being Chicago Airfield and air strips and normal roads actually have a bit of Positive camber so that when it rains the water washes off to the sides.
So that is why the car may veer off.
On and strangely enough I set my car's suspension to pretty much default (shocks, rebound and springs), but then made the sway bars at softest and the veer was sort of less.
The way I do to keep it from veering is usually to be Perfect shifting.
