These are now my best characters in order:
1.Sheik
2.Falco
3.Samus
I will use each of them as needed for battles.
BTW, how do I start a battle with Sheik instead of Zelda? It's a pain in the **** to have to Transform, because then I get hit by the foe, and then I take 50% before I get to Transform...

It takes literally a second to transform. If you need some space, you can kick them away or ledge drop transform. Don't ledge drop against Fox, though, he'll shine you.
