If you have the item that you are supposed to steal, and don't wan't to start over a lot just because a guard saw you, just go to jail! I went to jail a few times and when I got out, the stolen item was still there! This includes the Elder Scroll you steal for the last mission. Plus, if you do it before you break the Springheel Jak boots, you'll still have the boots, and you'll still complete the mission!
