He quit because he lost to Goldberg at WMXX, he got so fed up that he didnt win, he blamed it all on Stone Cold, because he was ref in the match, lost to benoit and quit.

Well Lesnar did come back after Wrestlemania XXVIII but then was a baby again. Brock Lesnar couldn't last 30 seconds with Hornswoogle when Hornswoogle is blindfolded, handcuffed, and on his knees.
