What does saving my game actually do ?

Most importantly in my opinion. I would say saving your game is necessary for the following reasons. Firstly if you want to turn the game off, with all the items you found. There is no auto save, so you MUST return to the safe house to save.
Second, finding sewers leads to fast travel. Once a sewer is found you may fast travel any distance. This is really important, because most of the game is based around back tracking for your gear IF you die. Also the main story line is about progressing further into London. So in a nutshell if you have these "checkpoints" or fast travels it is good.
