I've heard of turkey bacon, but sodium free bacon is just wrong.

The secret to perfect bacon is to start out with a cold pan (to prevent bacon curling) and cook the bacon on medium heat. It gives it that perfect crunchiness if you like it like that, or you can just have it a bit chewy. Depends on how long you cook it, but I love mine crunchy.
