You'd need to be a bit more specific about Jax. Which incarnation of Jax do you mean?
But to be honest, I have rarely used Dee Jay so I'm not entirely certain what he can do. I can't really answer this one with am informed reply. I'll jut say Jax because of the fact that he's pretty good in any incarnation.

I'm going to assume you mean the American version of Vega, not the character we know as M. Bison.
Well, Vega lacks a projectile attack, so Liu Kang would of course have an advantage. However, Vega does have air-based attack and MK4 Liu lacks air counters, so Vega could attack while avoiding Liu's fireballs. However, Vega mainly needs to get close to do any real damage, while Liu has distance attacks. The problem here is putting a 2D character against a 3D, but I'd have to say Liu Kang wins this one simply based on his offensive capabilities far surpassing those of Vega.

The whole point of this thread is about a hypothetical fight between two character from different games (even different games from withing the same series). Mainly character that would never actually meet unless there was a crossover.
And Cacodemon would win.
