As far as I know we've seen actual gameplay footage of the final smash for the following characters:
-Mario
-Link
-Samus
-Fox
-Yoshi
-Peach
-Bowser
-Pit
-Diddy Kong
-Sonic
I've heard about other characters' final smashes being used at E for all but have yet to see any videos of them.
Of the final smashes I've seen to far I'd have to say Link's is my favorite. I always thought I would love this move even when other seemed down on it. Not only is it really cool but it's really effective.
It seems that Link's final smash will work in this way: when activated Link flies at light speed to his nearest opponent, and traps his opponent in the triforce. Any other opponents that are close enough will also be trapped by the triforce. Then Link unleases a ruthless series of slashes and deals nearly 70% damage to everyone in the Triforce, and then with one final slash sends them flying. If the opponent had medium damage when attacked they have almost no shot at surviving. However, opponents can survive if they had very low damage to start with.

Don't forget that we still know of some final smashes even though they havn't been seen, such as Meta Knight's and (As of today) Ike's.
