You unlock both toward the end of the game.

you unlock the cool doors once you find the car specialties shop in coal harbor west
i heard you unlock the body kits once you beat the game, you unlock the unique 1s when you win 11 outrun races. rachel will say something about one of her friends has some cool parts

Youre correct in a way.
But once you win you get an SMS go to the star on the map then fet 2 the body shop in time. (I think you have to unlock all the stages first)
I have the doors now, you need to go to the Specialities Shop in Coal Harbor West.
