I've seen in random positions in the game, and on Vjun, how a Jedi can turn off his lightsaber, like Kyle Katarn did. How do you turn off sabers without being stuck in Force Choke.

If you are playing on a PC/Mac just press the button which is used for the weapon selection of the lightsaber....for example if you have your light saber equipped on number 1 then just tap number 1 to turn off your lightsaber.
I would imagine it is the same on xbox...
