hi, how do I get my sims to 'freeze' and not wake up or finish an action while I'm not playing the game? I played it last night and went back in today and they were nearly dead!
Or do I have to put them to sleep every time?

Unlike other Sims games this one is in real time and you can not freeze it. Right now the Brest you can do is give your Sims a 24 hour activity. - planting, fishing, sleeping and try to check in daily.
