There are ways to hijack it in the sky, and it's been done.
The only other ways are to :
A) Use an AR (like Dave said)
or
B) buy the PC version of this game. Like me =D

When that plane explodes btw, then it doesn't go down smoothly and doesn't gives you time to get in as stated, it actually drops down straight down like a brick rock just like any other plane in just a few seconds. Also ya can't enter it when it exploded, just like you can't enter any other vehicle/plane when exploded.
You also would have to be precisely at the front of the plane and next to it. You can't get in from the top, you enter it in a weird way from the front side/bottom.
Also lol at the "where you will hopefully see (and hear) the plane in the sky"
To conclude: That kid who wrote that on that site is writing bull.

It's a big cargo plane that can't be obtained (they left it out of the game, except for the mission Stowaway" where you don't even can gain control of it....you just enter the cargo room.
I'll post a short video then of me cheating to get it, getting into it, taking of with it...

yeah, i know. To be honest i have never seen that plane since the mission stowaway. The other planes ive seen are just the AT-400

But you (by you I mean people who play this game) should just buy the PC version. You can mod the vehicles and use trainers (which are downloadable for free). You build your own missions, change the speed, handling acceleration of a bike etc. Basically you can mod the whole game.
