How on earth do you unlock the professional difficulty setting, I have completed the game twice now but I just cannot access it, I would really appreciate some advice

You can not use a New Round you must start a new game to use Pro mode.

you need to finish game on normal, then start new game and go to Professional , do not carry on with "New Round"
if that doesn't work, do the ada extra's (not assainment ada the other one)
