Am I missing something? I can't find a way to choose superstar abilities for my CAW. Is it just something I can't do, or...?

no you are not missing something.The only way to choose your abilities is to look at what you need to do.A full list of abilities and how to unlock them are in the PS2 SVR09 Cheats/Hints

Indeed, once you get an ability, you're stuck with it, unless you play through Career Mode with the same CAW again.

If you pick your CAW and go through Career Mode with them again, their stats and abilities are erased.

If you don't want dirty pin, you're going to have to earn six abilities before the requirement for it is completed.

I think whether you get Possum pin, or Dirty pin depends on your Crowd reaction. Good/bad. Not too sure though.

Dirty pin is getting 5 stars against 3 wrestlers who have it. I don't know about possum pin. I got dirty pin by accident, but I got kip up and some other stuff that I wanted, so I don't feel like starting over. They should have made where you can make one change, or something.

You have to win six championships to get Kip Up. Which I'm finding to be a challenge. I always try to get Fan Favorite, Object Specialist, Outside Dive, and K.O. And then I end up getting Evasive Dodge and Dirty Pin by mistake, so by the time I get six championships, I've already got six abilities.
So I'm trying to settle for Resiliancy, but I'm finding it very tough. :(

Only ability I have so far is Object, and that was deliberate.
Hang on, if you don't have KO, is it impossible for you to KO an opponent with a finisher, or is there just a lower chance?

As far as I can tell, you must have the KO ability to KO anybody with a finisher. The KO system's a bit screwed up in this game, in my opinion. Even with the ability, you have to have their entire body badly damaged. Like, you have to have their arms and legs damaged, even if you plan on using a finisher that doesn't even touch their limbs. -_-

Yes, you do need the KO ability to KO someone, Unless the match stipulation IS to KO someone...then you don't need the ability...

Well I don't have ko and I ko people. You just need to have there whole body red, and then do a finisher or signature move. I guess the ko ability just makes it easier. Idk how.
