BACK ON TOPIC...
...it is hard to beat the guys when you're challenging for the WWE/World Championship's because the difficulty is suddenly ramped up from easy/normal to hard/legend in a heartbeat, plus, your technical stat is probably low because you didn't need to counter much when you faced the earlier superstars.
The easiest way to beat these people is to make the match a Table match, this way, if they surprise you and hit you with a finisher, the match isn't suddenly over.

I can win on the WWE Title path, but I can't get 5-star matches because everything gets countered. So is there a really easy way to get 5 stars in a really hard match. I had a 15 minute HIAC against Kane which only got me 3 stars, then I had a great 30 minute match, but I lost. :(

or a easy way is well this is how i beat MVP and jeff hardy since jeff beat me once in a possum pin and MVP beat me thrice with a possum pin playmaker and i jumped of a HIAC and missed,but on topic u do every other title so ur caw will be highest,then u pick ecw extreme rules then u smack them with weapons,including the ring bell until u have your finisher,hit them with it then pin if they get out repeat.

Yeah, but I don't get 5 stars by doing that. I won all the other Belts first, but that was just common sense.

I just usually do Extreme Rules Matches because more excitement gets you more of a rating. On average I get a 4.5 each match.

u need 1000 points to get 5 stars 200 =1 star so basically u need exitement aha pick ecw extreme rules then do everything smash them threw both announcer tables use enviromental grapples smack them with chairs and weapons use your finisher taunt a lot then give them the kill with a lethal running smack over the head with the title/ring bell
