The reason why is because they are glitches and if you get a world record time, and use those shortcuts, then they won't count.
Also, I can't put EVERYTHING I know on the web. Then, people will be able to beat me too easily! XD

yup, all hail .hack! He is the MKDS king!! I like the shortcut on delfino square, when near the bridge, to the left use a mushroom and you'll land on a port, lightweight car required, and then you can use a mushroom on the muddy part just before the speed draw-bridge

on peach garden after the flow beds you come to some more flower beds if you turn right then left you will get to a higher place
